The Eating in Color Series continues with another fantastic vegetable - carrots!
As addressed in Wednesday's Eating in Color: Orange , orange vegetables are great for your health! They're loaded with nutrients and antioxidants, plus they're good sources of fiber.
Carrots do a great job representing orange vegetables when it comes to nutrient content - one serving of raw carrots contains 428% of the Daily Value of vitamin A, 21% DV for vitamin K, 13% of the DV for vitamin C, and 12% DV for potassium. That same serving also has roughly 4 grams of fiber and no saturated fat or sodium.
