Pork Schnitzel with Green Olive Giardiniera

Homemade giardiniera (our version of the Italian pickled relish is doctored with briny green olives) and a squeeze of lemon are the perfect partners for crunchy fried pork chops. Giardiniera, a vinegary, Italian-style relish, is an excellent condiment for sandwiches and meats like these crispy, pan-fried pork cutlets. Finely chopping the vegetables and heating the brine speed up the pickling process. This recipe makes extra giardiniera, but it keeps well in the fridge for at least a month.
